Why FSSAI matters for food exporters
The Food Safety and Standards Authority of India licenses anyone dealing in food, from manufacturers to importers and exporters. The detail that catches new exporters out is the tier. FSSAI has Basic Registration, State Licence and Central Licence, and the level you need depends on scale, except for one rule that overrides turnover entirely.
Every food importer and exporter must hold a Central FSSAI Licence, regardless of turnover. A new exporter who applies for a Basic or State licence has the wrong document, and finds out at the worst possible moment. Applications now go through the FoSCoS portal, with the right forms and product categories, and the FSSAI number ties back to the IEC for export clearance.

Profile: a new merchant exporter of spices with a large first order ready to ship, but stuck on the licensing.
